Gluten Free Wood Fired BBQ Chicken Pizza

Let’s talk pizza for a minute. What’s not to love about it? It is crusty bread, melty cheese and rich sauce all combined… three of the greatest things in the world! And oh, man…this Gluten Free BBQ Chicken Pizza, homemade on the smoker will blow your mind.

Let me rewind to Christmas last year…or was it Father’s Day? I can’t even remember at this point. (Let’s blame that on pandemic living.) I found what looked to be the most amazing attachment to the Green Mountain Grill that allowed you to do your own wood fired pizza right at home. I don’t know about you, but pizza at home in the oven just never seems as good as from a restaurant. It doesn’t have that special crunch to the crust that you get from a hot pie straight outta the woodfire and the taste just isn’t quite the same. I mean, no offense to the regular ol’ oven, but it just doesn’t quite compare. This recipe can totally be done in the oven and it is absolutely delish. Green Mountain Grill Wood Fired Pizza Oven

We have found pizza making to be a really fun social event with friends over (oh, friends…we have missed you!) or just really fun to have the whole family involved in making pizza with the toppings their individual hearts desire.

This dough recipe is gluten free (as are all of my recipes) and it is totally delicious!!!! I’ve gotten pretty tired of the limited world of pizza crust options that taste like cardboard and are about 1/8 inch thick. I found this pizza crust recipe on Wheat By The Wayside and it has become our go-to! You truly won’t even know you are eating gluten free crust! It is the perfect crunch on the outside and chewy inside.

It has taken a little trial and error to get our cooking method down on the wood fire grill. Here are a few tips:

  • Thoroughly read and follow the guide from Green Mountain Grills for all of the proper techniques and their tips and tricks.

  • Make sure the pizza stone is heated to 650-800 degrees F before putting the pizza in

  • It should only take 2-4 minutes to bake the pizza

  • Coating the pizza paddle is crucial! A layer of flour/corn meal on it before the dough goes on helps it slide off into the oven!

Recipe Notes

If you don’t have the wood fire attachment, you can still enjoy this recipe in a conventional oven! Make these adjustments. Follow steps 1-6 and then follow the steps below.

  • Preheat the oven for at least 30 min. at 450°F with a baking stone or cast-iron pizza pan in the top ⅓ of the oven.

  • Place half of the dough on a piece of parchment paper that is no bigger than your pizza stone or pan.

  • Sprinkle with flour on top and either pat out the dough with your hands or gently roll it out with a rolling pin into a 12-inch circle.

  • Slide the pizza crust, along with the parchment paper, onto the pizza stone. Bake for 7 minutes, removing the parchment paper after 2-3 minutes.

  • Remove the pizza crust from the oven, top with sauce, cheese, and other desired toppings.

  • Slide the pizza back into the oven and bake for 7 additional minutes or until desired doneness.
