The Perfect Summer Blueberry Crisp

It is blueberry season friends!! Something about those sweet little bites of summer hold a special place in my heart. My favorite childhood book was The Blueberry Pie Elf by Jane Thayer. If you haven’t read it, you should! Elmer is an invisible elf that lives with the family in the book and does everything he possibly can to ask them to make him a bluberry pie - including every single household chore he can muster the strength to do. In the end, he gets his point across and enjoys “that warm, rich, melting, juicy, delicious, fruity blueberry pie.” I can still say that line by heart all of these 36 years later.

We spent some time up at our favorite local spot, Home Farm, this past week and came home with buckets of blueberries and a goal to make a crisp. Well, mission accomplished and accomplished well! I hunted for crisp recipes that looked easy and delicious and struck gold when I came across this one from Chelsea’s Messy Apron. She’s a favorite of mine and I’m not one bit surprised that her cobbler recipe is now my go to for all time. It is ooey-gooey with just the right sweet/salty/buttery/crunchy topping. Pretty much heaven in a baking dish.

Waking up to rain today was a welcome reprieve after 56 dry, hot days… mostly in the upper 80’s and a few in the 100’s…that’s a blazing summer for our area in the PNW! It put me in the baking mood immediately! So I jumped on those berries, determined to turn them into a heavenly dessert and one that would even please the Blueberry Pie Elf! I have to say I’m pretty sure he would approve. This recipe is so easy to adapt to be gluten free by just using Namaste flour.

So, lose your eyes, take a bite and be transported to the long, sweet days of summer - corn on the cob, picnic blankets by the river, a pitcher of lemonade and this crisp. What more could you need. Maybe an acoustic guitar? Enjoy friends!
