Gluten Free Fresh Strawberry Scones
I am in the midst of a life-long love affair with scones. You could almost consider them my love language. Since having to go gluten-free, they are something that I dearly miss. Memories of fair scones, hot from the oven and slathered with butter and jam, swim in my memory like the sultry days of summer that accompanied them. Craig and I used to hit the Puyallup Fair each year and scones were always on the list of must-do attractions. Pre-kid days, we used to stroll the fairgrounds hand in hand, mapping out which ride would be next and making sure to grab a bag of scones at the day’s end. I love reminiscing on those days and each tender bite of a scrumptious scone takes me right back.
As I planned out our Father’s Day brunch menu, I knew that scones needed to grace it. With a bag of fresh picked strawberries in the fridge, I decided to hunt for the perfect recipe that would let these local, in-season berries shine. I found this recipe from Two Peas and Their Pod and it did not disappoint. The original recipe is not gluten free, but I used Namaste Flour, as I always do, and they turned out really well! I’ve found that gluten free scones don’t rise quite as high when they bake as regular ones, but that seemed to be the only difference.
Soft and tender with juicy chunks of strawberries and topped with a vanilla icing drizzle, these Fresh Strawberry Scones will leave you clearing your plate and licking your fingers.
